With Halloween just around the corner, pumpkins are on our minds. We’re carving beautiful jack-o’-lanterns and sipping PSLs, so why not bring some of that orange squash to dessert? Like other fall veggies such as yams and beets, pumpkins are full of antioxidants and vitamins. So stock up on pumpkin goodness and satisfy your sweet tooth—almost guilt-free.

Here’s one of our favorite fall recipes: Pumpkin Spice Bars with a lighter cream cheese frosting.
Pumpkin Spice Bars
Ingredients:
(Try to use organic ingredients where possible)
– 1 cup whole wheat flour
– 1 teaspoon baking powder
– ½ teaspoon baking soda
– ½ teaspoon salt
– 2 eggs (free-range if possible)
– 2/3 cup packed brown sugar
– 1 cup organic canned pumpkin pie mix
– ¼ cup milk or almond milk
– ¼ cup melted butter
– 1 teaspoon vanilla extract
Light cream cheese frosting
– ¼ cup light cream cheese
– ¼ cup plain Greek yogurt
– 5 tablespoons powdered sugar
– ½ teaspoon vanilla extract
Instructions:
1. Preheat oven to 350°F. Spray a loaf pan with nonstick spray and set aside.
2. Whisk together the flour, baking powder, baking soda, and salt.
3. In another bowl, whisk the eggs, brown sugar, and pumpkin pie mix until smooth. Stir in the milk, melted butter, and vanilla.
4. Pour the wet ingredients into the dry and mix until just combined.
5. Bake 30 minutes, or until a toothpick in the center comes out clean. Let cool completely.
6. For the frosting, blend the cream cheese, Greek yogurt, powdered sugar, and vanilla until smooth. Add a little milk to thin if needed.
7. Spread the frosting, then slice and serve.
