Layered Oatmeal and Fruit Parfait in a Mason Jar

It’s early morning, and after hitting snooze a few times, you realize a healthy breakfast probably won’t fit into your rushed routine. But eating a wholesome morning meal actually saves time later — it recharges your brain and body and gives you the energy to stay productive all day.

Layered Oatmeal and Fruit Parfait in a Mason Jar

To help you start the day right, try this make-ahead parfait you can prepare the night before. It’s quick, simple, and packed with oats, nuts, seeds, yogurt, and fruit to keep you full until lunchtime.

Ingredients:
– 3 cups organic quick oats
– 1/4 cup honey
– 1–1.5 cups almond milk (or dairy milk)
– 1 cup almonds
– 1 cup desiccated coconut
– 1 cup pumpkin seeds
– 1 cup sunflower seeds
– 1/2 cup ground flaxseed
– 2 tsp cinnamon
– 1 tub (8 oz) plain Greek yogurt or a dairy-free option (we used cultured almond yogurt)
– 2 cups mixed berries (fresh or frozen — we used blackberries, blueberries and strawberries)

Instructions:
1. In a bowl, combine the oats, almonds, desiccated coconut, pumpkin seeds, sunflower seeds, ground flaxseed and cinnamon.
2. In a saucepan, heat the almond milk with the honey until it just starts to boil.
3. Stir the oat and nut mixture into the milk, mix until combined, and add more honey if you like it sweeter.
4. Let the mixture cool.
5. Layer the cooled oat mixture, yogurt, and berries in mason jars, alternating layers.
6. Refrigerate. This makes enough to fill about 4–5 mason jars, depending on their size.

Tip: Make these on Sunday night for grab-and-go breakfasts all week.
