As the leaves turn orange and the days grow shorter, our skin starts to feel the cooler autumn air. Fall brings drier temperatures that can sap moisture from your skin, but it also brings a bounty of seasonal foods that nourish it. Apples, pears, pumpkins and yams are full of vitamins and nutrients—delicious for your taste buds and good for your skin.
To welcome autumn (and squeeze in the last warm days), here’s a tasty vegan salad to enjoy. This Autumn Chop Salad combines antioxidant-rich apples and pears to help fight free-radical damage, pumpkin seeds for zinc to support immunity and skin health, and yams loaded with potassium, copper and manganese to energize and refresh your skin. Tossed with an apple-and-Dijon dressing, it’s a great way to greet the season.

Autumn Chop Salad
Ingredients:
Salad:
(Use organic ingredients when possible)
• ½ cup Granny Smith apple, chopped
• ½ cup ripe pear, chopped
• 8 cups spinach
• ½ cup yams, cut into small cubes
• ½ cup beets, cut into small cubes
• 3 tablespoons pumpkin seeds
• 1 tablespoon dried cranberries
Dressing:
• 2 tablespoons grainy Dijon mustard
• 1 tablespoon agave syrup
• 2 tablespoons applesauce
• 1 tablespoon apple cider vinegar
• 1 tablespoon olive oil
Instructions:
1. Preheat oven to 400°F. Dice the yams and beets into small cubes.
2. Spread the yams and beets on a lightly oiled baking sheet, sprinkle with a pinch of salt, and roast for about 20 minutes or until they’re browned.
3. While they bake, chop the Granny Smith apple and pear into small pieces.
4. Let the roasted yams and beets cool, then combine them with the apple, pear, pumpkin seeds and cranberries. Serve over a bed of spinach.
5. To make the dressing, place all dressing ingredients in a jar or container. Adjust quantities to taste, then shake well and drizzle over the salad.
