Try our seasonal recipe for coconut pancakes with a simple raspberry compote:
Organic Coconut Pancake Recipe With Raspberry Compote
Serves 3–4

Coconut Pancake Ingredients
– 1 cup organic whole white wheat flour
– 2 tablespoons organic sugar (preferably cane)
– 2 teaspoons baking powder
– 1 teaspoon salt
– 1 free-range egg
– 1 cup organic milk
– 2 tablespoons oil
– 1 teaspoon vanilla
– 1/4 cup shredded sweetened coconut (organic if possible)
Raspberry Compote Ingredients
– 2 cups organic raspberries (fresh or frozen, preferably fresh)
– 3 tablespoons organic maple syrup
– 1 tablespoon organic lemon juice
– 2 tablespoons water
In a large bowl, whisk together the flour, sugar, baking powder, and salt. In another bowl, beat the egg with the milk, oil, and vanilla. Pour the wet mix into the dry ingredients and stir until just combined. Fold in the shredded coconut—don’t overmix.
Heat a lightly oiled frying pan over medium heat (a mini pancake griddle works well for smaller pancakes). Pour batter onto the pan to form pancakes and cook until golden on both sides.
For the raspberry compote, combine all compote ingredients in a saucepan over medium heat. Simmer for 8–10 minutes, stirring occasionally, until the sauce thickens slightly.
Serve the pancakes hot and spoon the compote over them for a rich, fruity brunch.
